The one I keep coming back to

Everyone needs a roast chicken recipe they can do in their sleep. This is mine.

It’s not complicated. No brining, no trussing masterclass, no 47-ingredient spice blend. Just a good bird, a handful of things you already have, and a couple of small moves — like pushing tarragon butter under the skin — that make it feel like more than the sum of its parts.

The skin goes deep amber and glass-crisp from the paprika and olive oil. The breast stays juicy because that butter is doing its work from the inside. And while it rests — properly, for a full 20 minutes under foil — you make a quick pan sauce from the juices, or just pour yourself a glass of something red and enjoy the smell filling the kitchen.

This is Sunday lunch. This is Monday night with leftovers. This is the chicken that made me stop looking for another roast chicken recipe.

Ingredients

1 free-range chicken~2kg
1 lemon
3–5 garlic clovesunpeeled, lightly crushed
80g butterat room temperature
1 tsp dried tarragon
1 heaped tsp smoked paprika
1 tsp dried thyme
Olive oil
Sea salt
Black pepperfreshly ground
Butcher’s twine

Method

Before you start

Take the chicken out of the fridge at least 30 minutes before it goes into the oven. A cold bird in a hot oven seizes up — you want it relaxed.

Preheat your oven to 220°C (200°C fan).

The tarragon butter

In a small bowl, zest the lemon and mix it into the softened butter with the dried tarragon. Set it aside — you’ll use it in a minute.

Prep the bird

  1. Get a roasting tin that fits the chicken without too much extra room. Too big and the juices will spread thin and burn.
  2. Pat the chicken completely dry with paper towels — inside and out. Dry skin = crisp skin.
  3. Season the cavity generously with salt and pepper.
  4. Tuck the garlic cloves inside and scatter in some of the thyme.
  5. Pierce the whole lemon several times with a small knife or toothpick — this lets it steam inside the bird — and pop it into the cavity.

Get that butter where it counts

Using your fingers, gently work between the skin and the breast meat on both sides to create a pocket. Push the tarragon butter in, one side at a time, then smooth the skin back down. You’ll feel it spread as it melts in the oven, basting the breast from within.

Tie and season

Tie the legs together with butcher’s twine — nothing fancy, just snug enough to hold their shape. Now season the whole bird generously on all sides with salt, pepper, smoked paprika, and the remaining thyme. Be thorough. Slide it into the roasting tin and drizzle liberally with olive oil.

Roast

Place the tin in the hot oven and immediately drop the temperature to 180°C (160°C fan). That initial blast kicks off the crisping; the lower heat carries it through without burning.

Timing: 20 minutes per 500g, plus an extra 20 minutes. For a 2kg chicken: 80 minutes + 20 minutes = 1 hour 40 minutes.

About halfway through, open the oven and give the skin a quick spritz of olive oil — just enough to refresh the surface.

Rest (this is non-negotiable)

Lift the chicken from the tin, set it on a board or warm platter, and tent it loosely with foil. Leave it alone for 20 minutes. The juices settle, the meat relaxes, and every slice stays moist.

And after

Don’t throw away that carcass. Toss it in a pot with the leftover lemon, garlic, an onion, a carrot, and water to cover — simmer for a few hours and you’ve got stock that makes your next soup or risotto taste like you worked much harder than you did.
